Although well known for their deliciously concentrated red wines, the best-kept secret at this domaine just may be the Rosé. Made from three grapes, it is a blend of 30% Syrah, 30% Grenache, and 40% Cinsault. The Cinsault & Syrah are kept 3 to 4 hours on the skins, before being slowly pressed – a technique known as pressurage directe. The Grenache is fermented for a short time and then a saignée (bleeding of the tank) is done, thereafter all three are blended in tank.
The l’Instant Rosé exhibits a beautiful coral-pink color, lovely aromatics, and a fully dry palate. This textbook, dry, rich 2009 Ventoux Rosé is medium-bodied, beautifully textured and concentrated, vigorous and exuberant with intense aromas of flowers, strawberries, and spice. It is about as good as rosé can be from southern France. Serve nicely chilled with spring salads, spicy seafood dishes, prosciutto and other hams, and by all means take it on your next picnic!
